The Bitter-sweet and Bitter-sharp apples grown organically (USDA Certified) at our cidery are the tools needed to produce cider with the complexity to rival wine. Our sparkling ciders are bottle conditioned. Some are fermented and barrel aged in Oregon oak, others in 316 stainless. All are given the time for a slow cool fermentation encouraging the full development of the apples potential. We are located on the Olympic Peninsula where the cool maritime climate parallels that of the cider regions of England and France. The apple and pear varieties we grow were developed during hundreds of years of experimentation in those areas. We enjoy showing our operation to interested people so please give us a call and come take a taste!
